Thai Turmeric Enzyme
I simplify everything. Just fill the jar with the fruit or herb. Layer with lemon minus the seeds. Top up with honey. Leave it for a month. Game over

Add 1 layer of turmeric (about 1 inch) followed by a layer of lemon slices (without seeds) Continue until the jar is 3/4 full. Then add honey to cover all the ingredients. Keep for 1 month or longer.

Remember, all the ingredients must be 100% dry when you put them into the jar. Otherwise mould will form. I usually wash the fruits, dry them with a clean towel and place under the fan for a few hours.

Casey’s Mulberry Wine Making for Dummies
(This is my third time lucky. I am not a pro. ok)

Ingredients:
You can adjust the ratios according to taste and preference.
Mulberries : 1 Kg (You can use whatever fruits available to you.)
Sugar : 500 grams (Reduce  to taste)
Wine Yeast (Chiew Pneah) : 1 piece (To be pounded into fine powder)
Water : 2 liters
Instructions:
Use a low flame to heat the water. Do not boil.
Then gradually add the mulberries.
Stir until the water turns dark/purplish.
After that, turn off the heat.
Place the sugar in a glass jar (DO NOT use Plastic Container).
Sieve the mulberries and pour the mulberry juice into the jar.
Stir the mixture until the sugar is completely dissolved.
Then, let the mixture cool down to Room Temperature (about 26 degrees Celcius.)
Next, add the wine yeast powder and stir for a few minutes.
When done, cover the glass jar with the lid tightly.
The next day, remove the lid and stir the mixture. Repeat this 2-3 times daily for the next few days.
One week later, sieve the mixture (to get rid of excess yeast residue) and pour the wine into glass bottles for easy consumption.
Leave the mixture for another 3 weeks.
You need to check the wine periodically for excess gas that needs to be burped.
This means unscrewing the bottle cap to let the gas out and then closing it.
The wine should be ready for consumption 1 month (or later) after production.
I separate my stock into smaller portions so that I can enjoy different taste after longer aging periods.
Disclaimer: The pleasure is mine but the risk is yours. Haha

  1. Very few people know this but I have searched for a few months for the botanical name of the Taiwan Goji veggies. It's not related to the Goji plant at all, but creeping foxglove. The botanical name is Asystasia gangetica (L.) T. Anderson.
