Easy Steps In Making Water Kefir
Step 1 - 2 Days Fermentation in Water Kefir Grains
Step 2 - 2 Days Fermentation without Water Kefir Grains
Step 3 - Store in Refrigerator for daily consumption
The above Jar has completed the STEP 1.
Which is 48 hours fermentation in Water Kefir Grains.
Now we need to harvest the water and restart a new batch.
You need a Strainer (preferably plastic strainer as the metal strain will get rust when come in contact with Water Kefir) and a Big Jug.
You need to have Brown Sugar and Plain Water (un-Chlorinated) as the chlorine can be harmful to the Water Kefir Grains
Now pour out the Water Kefir into the Jug.
Put back the Water Kefir Grains back into the Fermentation Container so that we can restart a new batch.
Add Brown Sugar into the Fermentation Container.
My prefered portion will be;
1 Large Spoon of Brown Sugar to 500ml of plain water.
Add the water into the Fermentation Container. Remember not to fill the water till the brim, leave enough space for the bubbles to float on top of the Water Level.
Cover the lid, make sure that the lid is not air-tight as we need the fermentation gas to escape, failing so might cause the container to burst due to the pressure build up inside the fermentation container.
You have just completed STEP 1.
Pour the Water kefir that you have harvest into smaller bottles.
Bottle size with 100 - 200ml volume are ideal.
Note: If you are first time drinking water kefir, start with 100ml for a week and then gradually increase to 200 then to 300ml (max per day serving)
Let these bottle sit in room temperature for another 2 day (48 hours) before moving them into the refrigerator for daily drinks. Water Kefir best drink in chill .
You have just completed STEP 2.
NOTE: During the Step 2 or 2nd Fermentation, you can add some fruits slice into the bottle to enhance the flavor. Nevertheless, we personally like to drink it without any additional flavor.
After 2 Days in the room temperature, move the bottles into the refrigeration and enjoy for Water Kefir daily. (water Kefir can be store in refrigeration for 3 weeks)
